Vegan Kidney Meatballs

Add a little something to your pasta or put on a bun and enjoy!

Ingredients

  • 1 Can Kidney Beans, Drained/Rinsed
  • 2 Cloves Garlic, Minced
  • 1 Onion, chopped
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 tsp Cumin
  • 1 tsp Liquid Smoke
  • 1/2 Cup Oats
  • 3 tbsp Walnuts
  • 1/2 Cup Mushrooms
  • Salt/Pepper to taste
  • EVOO

Instructions

  1. Preheat oven to 375ºF.

  2. Place everything; onion, garlic, mushroom, liquid smoke, seasonings, oats, beans  into a food processor. Then blend until thoroughly combined.

  3. Dish out portions to shape into about 1 inch balls. Place on foiled pan. Back at 375ºF for 20 minutes.

  4. Serve on pasta or buns topped with marinara or vegan cheese!
