Quick and easy salad for the busy body!
Boil to simmer 3 cups of quinoa and 3 cups of water. Fluff with fork near the end.
Slice cucumbers, then cut in half. Slice in half tomatoes
Once quinoa is finished remove from heat and cool for 5 minutes.
Mix in bowl quinoa, cucumbers, tomatoes, olive oil, and salt/pepper
Serve hot or cold!
