Tomato Vegan Sausage Pasta

We cannot get rid of this cold weather in Chicago it is April 9th, and we woke up with snow on our cars. What gives!? I can’t wait until warmer weather and light and refreshing meals! For now, we will deal and enjoy this cozy Creamy Tomato Vegan Sausage Pasta. It is really good. And super comforting.

Today is Cub’s opening day! Which is always super fun and exciting. We live in the heart of where all the fun takes place, Wrigleyville. Maybe today will be the last of the super cold weather and onto warmer weather! Which gets me thinking of recipes that we may have done in the past that could be super good on the grill or at a tailgate! Yay!

Anyways, this pasta is super yummy and creamy, all without the dairy, which means less guilt! We love veggie sausage. When we first were experimenting, we were amazed with how much it is similar to real meat sausage. We had to do a double take. This is the brand we used, and it tastes great!

So, things you will need to make Creamy Tomato Vegan Sausage Pasta:

  • Veggie Sausage
  • Cherry Tomatoes
  • Onion
  • Rigatoni Pasta
  • Vegetable Broth
  • Dairy Free Milk
  • Flour (optional)
  • Spinach
  • Salt/Pepper/EVOO

Ingredients

First, in a heated, oiled pan, cook dice onion until fragrant. Lay in sausage links whole. Cook for 5 minutes each side. Remove links.

Vegansausage

Add in vegetable broth, dairy free milk, and flour and mix all together. Let mixture come to a boil and thicken a little. Add in tomatoes and spinach. Mix. Cook until spinach is wilted. Cut links into disks add into pan and mix all ingredients.

CreamyVeganPasta

If you pan is large enough, add in pasta. If not remove and add into a bowl large enough for pasta and veggie mixture.

 

Serve hot!

Creamy Tomato Vegan Sausage Pasta

Ingredients

  • 1 Pack of Veggie Sausage
  • 1 Cherry Tomatoes, Halved
  • 1 Diced Onion
  • 1 Cup Spinach
  • 1 Box Rigatoni Pasta, cooked
  • 1/2 Cup Vegetable broth
  • 1/2 Cup Dairy Free Milk
  • Salt/Pepper/EVOO
  • 1 TBSP Flour Leave Out if Gluton Free

Instructions

  1. In a heated, oiled pan, cook dice onion until fragrant. Lay in sausage links whole. Cook for 5 minutes each side. Remove links. Continue cooking onions.
