Pizza is everyones favorite, lets be real here. Following close in the ranks, for the busier person, is the CALZONE! BUT a Vegan Calzone is obviously where its at.
Lately, life has got the best of us, busy busy busy. Last week, David and I went to see THE Justin Timberlake. It. Was. Awesome. We had general admission, it was an open standing area. We were able to get right up on the stage and get this… He touched my hand! David gave me a little boost. It was great.
These vegan calzones were simple and heated up nicely the day after and were pretty filling too. And you can put whatever you want. So, you can pack them up super stuffed, or leave lots of space. It’s completely up to you!
Things you will need to make these amazing Vegan Calzones:
- Marinera Sauce
- Vegan Shredded Cheese
- Banana Pepper/Jalapeno
All these veggies are completely up to you.
How to make a Vegan Calzone:
If the veggies are not chopped, chop them up semi small pieces.
Throw all the veggies into a pan and sauté until all are cooked through. Or you cook separately if you choose to top your calzones in an orderly fashion.
To make the dough, combine the flour, water, EVOO, yeast into a bowl and mix. Remove from bowl to knead until fully combined. Wrap in wet towel and let sit for 20-25 minutes. Divid dough into 4 sections and roll out into oval/circular shapes.
Spoon one table spoon onto one half of the rolled out dough. Leave about a half inch from the edge. Cheese goes directly over top of marinera. Place toppings on top of one another.
Fold the other half of the dough over toppings and knead the edge together. Rub top of calzone with olive oil.
Place in oven for 20-30 minutes at 375ºF.
Enjoy with ranch, marinera, or any other condiment!

- 3 Cups Flour
- 1 Cup Water Warm
- 1 TSP EVOO
- Pinch Salt
- 1/2 TSP Yeast
Toppings (all optional)
- 3 TBSP Minced Garlic
- 2 Cups Spinach
- 1 Cup Diced Squash
- 1 Cup Diced Zucchini
- 1 Sliced Banana Pepper
- 1 Diced Pepper
- 2 Cups Vegan Shredded Cheese
- 1/2 Cup Marinera Sauce
Mix all ingredients for flour in a bowl until fully mixed. Knead until smooth. Place a damp paper towel around dough for 20 minutes for yeast to rise. Preheat oven to 375ºF.
Option 1: In an oiled pan, sauté all vegetables together until slightly tender.
Option 2: In an oiled pan, sauté vegetables separately.
Divide dough into 4 sections and roll out into rounded rectangle shapes, about 1/8 inch thick.
Cover half the dough with 2 TBSP of marinara sauce, leaving about 1/2 inch from edge. Top with cheese followed by sautéd veggies.
Fold over other half of dough and crease in a twisting fashion to secure dough to each other. Brush a dab of olive oil over top.
Bake for 20-25 minutes. Enjoy
