Vegan Grilled Mac and Cheese

Yes, you read that right. Vegan Grilled Mac and Cheese! It’s as wonderful as it sounds really. A little guilty pleasure, that isn’t so guilty as it is completely VEGAN!

I bet you would never heard the words mac and cheese eating a vegan diet, let alone a GRILLED MAC AND CHEESE! Let me tell you, its wonderful. It’s a little cheat meal that really isn’t such a cheat after all. David devoured the a couple in one sitting. I dipped mine in buffalo sauce, because buffalo sauce is LIFE.

At this point, David and I have been vegan for 8 months. We have had a whirlwind of a time. Lots of questions we have, lots of questions people ask us. Of course the most popular, “Where do you get your protein?”… Major eye roll. But otherwise a lot of people are genuinely interested in learning about the lifestyle, as well as in the food we eat and recipes we cook. They are interested in making it for themselves, which is super awesome!

BACK TO THE MAIN TOPIC: GRILLED MAC and CHEESE!
Things you will need:
Elbow Macaroni
Cashews
Water
Nutritional Yeast
Garlic Cloves
Potatos
Carrots
Bread

Basically, you’ll be making mac and cheese and then grilling it on bread. Make a box of elbow macaroni according to the box.

Soak the cashews in water for 30+ minutes.

Also, cut the potatoes and carrots into bite size pieces and also boil until fork tender.

Once the potatoes and carrots are boiled. Place in a blender along with drained cashews, water, nutritional yeast, garlic, and seasonings. Blend on high speed until ingredients are blended well.

Pour of cooked macaroni and mix thoroughly. Oil a pan, and place bread down. Load up bread with mac and cheese mixture. Top with another bread. Once browned on one side, flip.

Vegan Grilled Mac and Cheese

Get cozy with this comfortable vegan grilled mac and cheese

Ingredients

  • 1 box Macaroni
  • 1 Cup Soaked Cashews 30 minutes
  • 3 TBSP Nutrional Yeast
  • 2 Garlic Cloves
  • 1 Cup Cooked Potatoes
  • 1/2 Cup Cooked Carrots
  • 12 Slices Bread
  • EVOO
  • 1/2 Cup Water add more if not thin enough mixture

Instructions

Before Cooking:

  1. Diced and cook until tender potatoes and carrots. Soak cashews in water for 30+ minutes

  2. Make a box of elbow macaroni according to the box.

Cheese

  1. Pour of cooked macaroni and mix thoroughly. Oil a pan, and place bread down. Load up bread with mac and cheese mixture. Top with another bread. Once browned on one side, flip.

  2. Place cooked carrots and potatoes in a blender along with drained cashews, water, nutritional yeast, garlic, and salt and pepper. Blend on high speed until ingredients are blended well.

  3. Mix cooked macaroni and cheese mixture well.

Assembly

  1. Place a piece of bread onto oiled pan. Load amount of desired mac and cheese mixture onto slice of bread. Place second piece on top. Cook for a few minutes until bread it browned. Flip and repeat.
