Maybe if we all repeat summer, three times, summer will take place, because this we are so over this cold weather! David and I are on about our 3rd cold… It’s just not fun. Hopefully this Tempeh Vegetable Sandwich will help the cold blues.

I feel like lately, all we have done is run run run… I need a week or just a few days of relaxation! Who is with me. But really, I am so over this cold weather. It fluctuates so much, it’s super annoying.

This tempeh vegetable sandwich will definitely brighten your day, and bring a smile to your face. Packed with so many veggies and some tasty tempeh, you won’t be sorry. This sandwiches are super filling too.

On to the good stuff…

What you need to make a Tempeh Vegetable Sandwich:

  • Tempeh
  • Bread
  • Spinach
  • Pepper
  • Carrots
  • Banana Peppers
  • Cucumbers
  • Vegan Thousand Island Dressing

With all these vegetable ingredients, you’ll want to slice length wise, the length of the bread.

For cooking the tempeh, you’ll want to slice about 1 inch pieces long ways. Fry in oil on both sides for 4-5 minutes each.

Assembling the sandwiches is simple. Take the spinach and cover the bottom layer of bread. Place the strips of pepper, cucumber, carrots, banana pepper, and cucumbers over the spinach. Layering each vegetable to your liking. Top with cooked tempeh. Finally, layer more spinach and dressing. Place piece of bread on top. Serve toasted or plain.

Store sandwiches for later in aluminum foil or parchment paper. Also, for an added texture element, toast whole sandwich in toaster oven after assembly.

Tempeh Vegetable Sandwich

Ingredients

  • 1 Package Tempeh
  • 2 Cups Spinach
  • 1 Pepper
  • 1 Cup Matchstick Carrots
  • 1/2 Banana Pepper
  • 1 Medium Cucumber
  • 2 TBSP Vegan Thousand Island Dressing

Instructions

  1. Slice the pepper, banana pepper, and cucumber length wise, the length of the bread. 


  2. Slice tempeh about 1 inch pieces long ways. Fry in oil on both sides for 4-5 minutes each. Split amount in half.


  3. Take the spinach and cover the bottom layer of bread. Place the strips of pepper, cucumber, carrots, banana pepper, and cucumbers over the spinach. Layering each vegetable to your liking. Top with cooked tempeh. Finally, layer more spinach and dressing. Place piece of bread on top. Serve toasted or plain.

Recipe Notes

Keeps well for one day in aluminum foil. Toast bread prior to assembly, or toast whole sandwich in toaster oven after.
