Wake up your taste buds with these amazing Vegan Stuffed Shells. You won’t believe there is not a single drop of milk or cheese in them! It’s unbelievable. Heads up now, you may want to double the recipe now because your family will be asking for seconds and thirds!

Guys, how are ya. We’ve been BUSY. Life man. LIFE! Valentine’s has come and gone. The cold is unfortunately here to stay for a little while longer it seems. ITS NOT LETTING UP!

Anyways, we love pasta, we’ve mentioned that before, and we’re mentioning it again. Pasta saves lives. Not really, but sometimes I wonder if it really gives me more life. LOL.

Prior to being vegan, I loved stuffed shells. They were so good! Little shells were great too, so who would love stuffed shells!

This recipe is inspired by our lasagna we made and posted a little while back, which is also a home run.

For this vegan stuffed shells recipe, here is what you will need:

  • Jumbo Shells
  • Marinara Sauce
  • Firm Tofu
  • Hummus
  • Spinach
  • Basil
  • Oregano
  • Salt
  • Pepper

Pop the shells into a boiling pot of water. Cook until al dente. Press tofu for 10-15 minutes with paper towels. Pre heat oven to 375ºF.

Mix together is a decent sized bowl tofu, hummus, chopped spinach, basil, oregano, salt, and pepper. I used a fork and mashed it all together.

Vegan Stuffed Shells

Then, line a rectangle shape baking dish with a thin layer of marinara. Stuff each shell with the tofu mixture. Place side by side in dish.

Once you have finished stuffing, drizzle remaining marinara sauce over the shells. Place in oven for 15 minutes.

Vegan Stuffed Shells

Ingredients

  • 20 Jumbo Shells
  • 2 Cups Marinara Sauce
  • 1 Block Firm Tofu
  • 1 10oz Garlic Hummus
  • 1 Cup Chopped Spinach
  • 1 TBSP Basil, Oregano
  • Pinch Salt/Pepper

Instructions

  1. Cook shells in boiling pot of water. Cook until al dente. Cook some extra in case they tear.

    Press tofu for 10-15 minutes with paper towels. Pre heat oven to 375ºF. 

  2. Mix together is a decent sized bowl tofu, hummus, basil, oregano, salt, and pepper. I used a fork and mashed it all together. Mix in spinach.
