This vegan roasted beet pasta will WOW your significant other. And since it’s a beet, it’s pink! Hot pink roasted beet pasta! How great is that?! The color pink goes so great together with Valentine’s Day!

The goodness of this dish obviously comes from the color of the beet. But don’t be alarmed by any means, thankfully beets don’t such a crazy taste as you have maybe been conditioned to think growing up (This statement includes myself). The taste is almost kind of bland. But thats fine! With this vegan roasted beet pasta, you can top it with more seasoning like salt, garlic, or other veggies with no harm done!
The process is fairly simple.
Things you’ll need for Vegan Roasted Beet Pasta:
- Roasted Beet Hummus
- Penne Pasta (Or your favorite pasta)
Cook Pasta according to box. Remove from heat.
In an oiled pan, place your garlic and onion in. Sauté until each are translucent and fragrant. Grab the spinach and add into the pan. Move around until the spinach is all wilted.
Add in onion, spinach, and garlic with cooked pasta.
Mix in hummus to other ingredients. Mix until mixed through. Add in some olive oil if having issues spreading the mixture around.

Vegan Roasted Beet Pasta
Enjoy this Valentine's themed dish with a side of love
- 1 Cup Roasted Beet Hummus
- 1 Box Penne Pasta
- 1 Cup Spinach
- 2 Cloves Garlic, minced
- 1/2 Onion
Cook pasta according to box. Set aside.
In an oiled pan, sauté garlic and onions until translucent
Add in spinach and cook until wilted
Add all ingredients in together, garlic, onion, pasta, spinach. Mix well.
Lastly, add in hummus and mix well. Add in a little EVOO if needed to help disperse.
