Ever since we became vegans, people are always so curious about our journey and have very specific questions. One thing we learned, is that people think they can’t go vegan because they will have to eat only salads and they’ll miss their favorite style of foods. Our vegan Kidney Bean Meatballs proves that belief wrong!
V and I wanted to make something quick and easy to eat, that was fun and nostalgic. We also have been focused on making sure we are getting protein, so where did we go? The magical fruit – BEANS! Hince the name, vegan Kidney BEAN Meatballs.
We all know the silly (and hilarious) song we sang as kids about beans. What makes them magical to me as an adult is that they are delicious, versatile, and really good for everyone. You see black beans in a lot of our stuff, but we went with the amazing Kidney Beans as the base for our meatballs. Should we call them Beanballs? You tell us!
Not only did we get to reap the benefits of beans, but this was really simple to make, we coupled it with a few amazing sides during the week, and you can dress these up with marinara, vegan cheese, or whatever other toppings/condiments that makes your heart warm!
Few ingredients, solid rolling skills, and a food processor and you’re able to eat these vegan kidney bean meatballs and tell your non plant-based friends you were eating meatballs!
