Simple Vegan Pesto Pasta

Guys. We love pasta. OKAY. THERE. WE SAID IT. But Vegan Pesto Pasta! BAM!

Almost once a week we have a meal that consists of a pasta. We change it up of course. Our favorites are orzo, macaroni, penne, and so on. But pasta dishes can get a little boring if all you’re adding is some basic veggies and pasta sauce.

It’s just a nice change to just rice, chickpeas, quinoa… etc. A nice little switch up.

We make pasta lotsa ways. Here is one way we’ve made it as well as a lasagna. Each one is fairly easy and super tasty. A nice base for and vegan meal is chickpeas. They are great. They able to be used in a variety of ways. It’s really hard to go wrong with chickpeas. Anyways.. the recipe.

Vegan pesto pasta! SO YUM! You can of course go to the store and buy a pesto. BUT WAIT. In my experience at the store… I literally did not find one pasta that was vegan. They have cheese in it. Am I the first to know this? I can’t be.

We made our own!

Seriously, this recipe is amazing. The smell fills your space and has everyone in the office coming over to see what you’re eating. It’s that good.

Anyways.

Items needed for Vegan Pesto Pasta:

  • Penne
  • Broccoli
  • Tomato
  • Vegan Pesto Sauce

Pretty simple, right?

Boil box of penne following directions on box. We just used this simple brand: Here.

Sauté broccoli pieces in an oiled pan. Cover for 3-4 minutes, until green color turns brighter. Add into cooked penne.

Half each of the tomatoes and sauté in same pan for 3-4 minutes. Add into cooked penne.

sauted HALVED GRAPE TOMATOES

Mix the ingredients well. Add in the pesto sauce and mix thoroughly.

Vegan Pesto Pasta

Create an exciting dish with this pesto pasta!

Cook Time 15 minutes

Ingredients

  • 1 box Penne
  • 1 Crown Broccoli, trimmed
  • 1 quart sized Grape Tomatoes, halved.
  • Olive Oil

Instructions

  1. Cook pasta as it says on the box

  2. Sauté chopped broccoli in oiled pan. Cook 3-4 minutes with lid on. Remove once color has become more vibrant. Add to cooked penne.

  3. Sauté halved tomatoes for 3-4 minutes in same pan. Add to cooked penne. 

  4. Mix the three ingredients. Add in pesto. Mix well. Serve hot.

  1. Hello! Thank you for posting a Vegan Pesto recipe. I’m DF but I also love Pesto. The only Pesto I have ever found without diary is from Trader Joe’s and that’s 40 mins from my house. Your recipe looks so yummy and I can’t wait to try myself. Thanks for such a super easy recipe. Pesto on everything now!

    1. We had a huge issue with searching for a dairy free option which led us to obviously making our own! I don’t think we will ever search for a store bought option. It is so good homemade!

  2. Well, I am not a vegan at this point. But, I love having ways to cook that do not include animal products. When my sister in law went vegan, I wondered why. Now I can see why, never realized how indoctrinated we are as a society to eat animal products and how many things have it in them.

    1. It’s an amazing change for your health alone. We have ate vegan for about 7 months, and both of us have changed physically and feel so much better otherwise!
