Vegan Broccoli Casserole

What are your plans for Christmas? We are going to be in Miami! I have never been; David has. We are excited to explore the city as vegans and see what Miami has to offer!

We are already tired of this cold weather! We are always in search of ideas cook up to warm us up; which brings us to this recipe. David already said it was going to be a staple and a repeat, which I am all about because it was seriously that good!

It’s honestly not that difficult to make either. Just a few ingredients. Honestly, it blow my mind how creamy and full of flavor this dish was without milk or cheese.

SO. GOOD!

You only need a few ingredients too:

  • Quinoa
  • Vegetable Broth
  • Dairy Free Milk
  • Broccoli
  • Onion
  • Vegan Cheese
  • 2 Tomatoes
  • Salt/Pepper

First you want to cook the quinoa in the veggie broth and dairy free milk. Preheat oven to 375ºF.

While that is cooking, cut the broccoli from the stems. Also, cut the onions into small pieces. Dice the tomatoes.

Place the onions into an oiled skillet. Cook until flimsy. Then add in broccoli and move around until the color brightens up.

After both the quinoa and vegetables are finished cooking. Add the quinoa and tomatoes into the skillet with vegetables. Pour 3/4 of the bag of vegan cheese and mix all together.

Bring out a baking dish. I used a cask iron skillet but a rectangular baking dish will work as well.

Pour quinoa mixture into baking dish and top with rest of vegan cheese.

Bake for 15 minutes.

Remove from oven and serve!

Vegan Broccoli Casserole

Ingredients

  • 1 1/2 Cups Quinoa
  • 2.5 Cups Vegetable Broth
  • 1/2 Cup Dairy Free Milk
  • 1/2 Onion
  • 2 Tomatoes
  • 3 Crowns Broccoli
  • 1 7oz Cheddar Vegan Cheese

Instructions

  1. Cook quinoa in the vegetable broth and dairy free milk. Cook on high then low once boiling. Cook until 80% of liquid is soaked up. Preheat oven to 375ºF.


  2. Cut up onion, tomato and broccoli stems off.

  3. Place in oiled skillet onion. After 5 minutes, add in broccoli florets. Move around until color brightens up. 

  4. Add in cooked quinoa, tomatoes and 3/4 vegan cheese. Mix well.

  5. Move mixture into baking dish. Top with rest of cheese. Bake for 15 minutes. 

  6. Remove from oven and serve hot! Enjoy!
