Quinoa Salad

This is probably the easiest meal… ever.

No really.

Its super simple and requires just 15 minutes prep and 15 minutes cooking. THATS IT!

When you think vegan, people think salad. Lettuce. Chopped veggies. Salad. Boring Salad.

I don’t think in the time that we have been vegan, we have had a straight up salad. Yes, this is labeled salad, but there isn’t one leaf of spinach in the mix.

This recipe is a staple for us because we lead such busy lives. We have late nights and don’t feel like making something up or even popping anything in the microwave. So, we came up with a little mixture to solve that problem.

For example, this week we have three large events that take place in evening. We will be out of the house before dinner time and not returning until well after 11pm.

Quinoa Salad saves lives. Also, it only has 3 main ingredients (plus oil and salt/pepper).

This little dish is good hot or cold. Which is another huge plus for people on the go. No microwave, no problem.

David likes his hot, while I don’t mind eating it cold! Also, with this recipe we meal prepped it for the week, it does yield a large amount.

Items needed:

  • 3 Cups Quinoa
  • 2 Cucumbers
  • 2 Packs of Cherry Tomatoes
  • Olive Oil, Salt, Pepper

First, place 3 cups of quinoa and 6 cups of water into pop. Bring to a boil and then simmer. Fluff with fork as it comes to an end.

While the quinoa is cooking, start chopping the cucumbers. I sliced then cut into half. With the cherry tomatoes, I cut in half.

Once the quinoa is finished. Remove from heat and let cool for 5 minutes.

Mix cut cucumbers, tomatoes and quinoa in large mixing bowl. Drizzle 2 tbsp of olive oil, and 1 tsp of both salt and pepper.

Mix well.

Serve hot, or cold, your choice!

Quinoa Salad

  • 3 Cups Quinoa
  • 2 Large Cucumbers
  • 2 Packs Cherry Tomatoes
  • 2 TBSP Olive Oil
  • 1 TSP Salt & Pepper


  1. Boil to simmer 3 cups of quinoa and 3 cups of water. Fluff with fork near the end.

  2. Slice cucumbers, then cut in half. Slice in half tomatoes

  3. Once quinoa is finished remove from heat and cool for 5 minutes. 

  4. Mix in bowl quinoa, cucumbers, tomatoes, olive oil, and salt/pepper

  5. Serve hot or cold!
