Chocolate Powerballs

Alright. Who doesn’t love sweets?

That was a rhetorical question because everyone loves sweets. Just because you’re vegan, doesn’t mean you have to cut out the sweets! These little balls of goodness not only satisfy that sweet tooth, but also a nice little snack to keep you going through the day.

Remember when I posted about snacks a little while back? (If no, click here to read) This is a great example to add to that list of snacks! Super simple too.

We love them because they are easy to grab and eat on the go at work or in between meetings, or maybe before a quick workout.

Here’s a prime example. David and I have out company holiday party tonight. It’s highly doubtful that there will be a lot of option for us to eat while there. These little snack will be perfect to help us through the night.

Anyways, these little balls. Super simple. Let’s get to it.

Items needed:

  • 1 Cup Shredded Coconut
  • 1 1/2 Cup Oats
  • 2 TBSP Maple Syrup
  • 6 OZ Vegan Chocolate
  • 1 Cup Peanut Butter

This process is pretty simple for the most part. Might get a little messy!

If you chocolate is not in the chip form but in the bricks, crush the chocolate until it is like this. Or like me, use a food processor to get the job done easily and smoothly.

Once that’s complete, put all contents into a medium bowl. Mix thoroughly.

I used my hands, as it was easier. If you find the consistency is either too dry or too wet, add either more syrup or oats depending on the scenario.

Once the items are mixed well, start forming into about 1 inch balls using your hands. This recipe makes about 9-10 balls. Store in refrigerator until ready to munch on!

Chocolate Powerballs

A perfect snack to satisfy that sweet tooth!

Prep Time 10 minutes
Servings 5

Ingredients

  • 1 1/2 Cup Oats
  • 1 Cup Peanut Butter
  • 1 Cup Shredded Coconut
  • 2 TBSP Maple Syrup
  • 6 OZ Vegan Chocolate

Instructions

  1. If your chocolate is not in chips, place in food processor to crumble up.

  2. Add chocolate, peanut butter, coconut, maple syrup, and chocolate into a medium bowl. Knead and mix items very well. Add syrup or oats depending if mixture is too dry or too wet.

  3. Once mixed, separate and begin shaping parts in small balls using hands. Refrigerate until ready to eat! Enjoy!
