Multi Potato Breakfast Burritos (Vegan)

Man… One fear we had going vegan was that we would lose breakfast all together. No meat?! No eggs?!

But the harder we thought about breakfast, we realized that being CREATIVE is what makes the best morning meals. Something convenient, delicious and gives you the energy need to start the day.

And what better way to do just that than with a flavorful breakfast burrito! I (David) personally love potatoes. I’m always checking out the hash browns at grocery stores. Veronica caught on quick and whipped something up!

 

Here’s what you’ll need:

  • 1 Large Potato Sliced & Diced
  • 1 Large Sweet Potato Sliced & Diced
  • 2 Peppers Chopped
  • 1 Can Black Beans
  • 12 Tortillas
  • Hot Sauce
  • Vegan Cheese
  • Olive Oil

So first you need to slice & dice the potatoes. I recommend chopping the sweet potato up and getting that in the pan first as it takes longer to cook than the other potato.

Chop up both potatoes either way and toss in a oiled pan. Cook in the skilled for about 15- 20 minutes until potatoes are softened and cooked through.

Next add the peppers. Cook through until soften. About 8 minutes. Mixing every few minutes. Finally add the black beans and heat through while mixing.

Assembly.

Lay the tortillas on a flat surface. Place about 1 tablespoon of your favorite vegan cheese down the middle. Top with 1/4 cup of the potato mixture. Finally add hot sauce (if desired).

Now, the tricky part happens. This is the part I call Veronica in to help.

Folding the burritos. It takes practice. LOL. Repeat the above steps for each burrito. Makes about 12 burritos.

 

Once finished either eat right away. We roll ours in aluminum foil and place in the freezer and eat throughout the week. They are so good heated up as well.

Ingredients

  • 1 Large Potato
  • 1 Large Sweet Potato
  • 1 Peppers
  • 1 Can Black Beans
  • 3/4 Cup Vegan Cheese
  • 12 Medium Tortillas
  • Hot Sauce
  • Salt Pepper
  • Olive Oil

Instructions

  1. Chop up both potatoes to small pieces. Cook in oiled skillet. Cook until all potatoes are softened through. Season with salt and pepper.

  2. Add in chopped up peppers. Cook for 8 more minutes. Add in black beans and warm through

  3. Place tortillas on flat surface. Add 1 TBSP vegan cheese, 1/4 cup potato mixture, hot sauce.

  4. Wrap in a tight burrito. Serve hot.

Recipe Notes

Burritos are easy to freeze. Wrap in foil. When ready to eat, place in microwave for 2 minutes.
