I don’t think I know one person who doesn’t like pasta. Pasta is just for the soul.
I (Veronica) grew up with a super Italian grandma. Lasagna was the main dish at holidays including Thanksgiving an Christmas. Since her passing this past summer, I’ve made it my duty to keep up with that tradition! Anyways, that vegan lasagna will come soon ;).
Often times David and I are invited over to friends to hang out, chat etc. Typically we don’t expect them to cater to our diets just because. But this one time, our friend went completely out of her way to make us a vegan style pasta dish!
We were blown away. Mostly because it was such a nice gesture. So I retained the simple dish and recreated it at home, with a little umph to it.
It was a hit. David really enjoyed it. Super tasty and so filling. And only 6 ingredients. (Drops mic)
Things you’ll need:
- Pasta Sauce
- 1/4 Onion
- 1 Handful Spinach
- 2 Cloves of Garlic
- 1 Can of Chickpeas
- Salt & Pepper to Taste
First an foremost you’ll want to preheat the oven at 400 degrees F for the chickpeas. Roasting the chickpeas is completely optional. I like to do this step to add a bit of texture.
Start boiling water according to pasta packaging.
Once preheated, pop the chickpeas on a pan, and toast for 10 minutes.
While these are roasting cook the pasta in boiling water until al dente.
Next start dicing up the onion and mincing the garlic.
Toss in oiled skillet. Cook long enough for the onion to be almost translucent and garlic fragrant. Add bunch of spinach and saute for a few minutes longer.
Remove from heat.
Drain pasta and return to original pan. Pour in 1.5 cups of pasta sauce followed by chickepeas and onion/spinach. Mix together thoroughly.
Chickpea Pasta (Vegan)
Everyone loves a good pasta dish!
- 14 Oz Pasta
- 1 1/2 Cups Pasta
- 1 Can Chickpeas
- 1 Handful Spinch
- 2 Cloves Garlic
- 1/4 Onion
Boil water in pan for pasta according to box's direction. Preheat oven to 400ºF. Spread chickpeas on pan and insert into oven roast for 10 minutes. Drop pasta in boiling water.
Dice onion up and mince garlic. Place in oiled skillet and saute until onions are translucent, about 5 minutes. Add spinach to onions and mix through for 2 more minutes.
Drain cooked pasta and return to pot. Add in pasta sauce, chickpeas, spinach, onion and garlic. Serve warm. Enjoy!
