BBQ. barbeque. Bar-Be-Que. Regardless, these sandwiches are BOMB!
Sweet potatoes are sooo good. They are good as sides, mains, or snacks. This twist on American food will for sure have people asking for seconds.
This dish is perfect to satisfy that hardy appetite. Any leftovers heat up well too. Also, if you find yourself, like me, making way too much shredded potatoes, you can freeze in the freezer for a later use. I separated my extras into two freezer safe bags and stored in the freezer. Perfect for a last-minute meal!
This type of meal is awesome to bring to a cookout, carry in at work, lunches, anything really!
Eating vegan, you desire the idea of other foods you no longer eat. So what do you do?! Improvise, explore and try new things! This recipe is fun. Not to mention (David can contest) I love to use my food processor any chance I get.
My food processor is just a simple one I got from Target. It was inexpensive and gets the job done!

2 Sweet Potatoes
Favorite Vegan BBQ Sauce
Salt & Pepper
Depending on the shape of the sweet potatoes, you may have to cut them into slender pieces to fit through the opening of the food processor. I had to cut mine long ways a few times.
For this recipe, you’ll need the attachment that shreds vegetables. It cuts down so much time. I suppose you could use a cheese grater as well.
Once I cut the potatoes into appropriate sizes, I was ready to feed through the processor. It’s kind of fun process to be honest.
Two potatoes make A LOT of sandwich toppings by the way. But refer to my note above that you can ALWAYS freeze and use at a later time!
Next begin to cook in an oiled skillet and add dash of cayenne, salt and pepper to taste. I usually toss mine around for 8-10 minutes or until desired tenderness. I like mine a little less than fully soft so that it creates some crunchiness and texture.
While the potatoes are cooking, place the buns in an oven for 4-5 minutes at 375º F. Remove once finished.
Just before you remove the cooked shreds from the stove top, add choice of BBQ sauce and mix well.
Place buns on a plate and spoon bbq sweet potatoes onto buns. Dress with your choice of toppings too!
Serve hot with sides such as rice, chips, frys, or fruit!

Vegan BBQ Sandwiches
Take the ol' BBQ sandwich in a different direction!
- 2 Sweet Potatoes
- 1 Cup Vegan BBQ Sauce
- 1 TSP Cayenne
- 6 Buns
- Olive Oil
- Salt & Pepper
Cut potatoes length wise to fit into food processor. Feed through shredding device.
Take shredded pieces and cook in oiled skillet over medium heat. Usually this part takes about 15 minutes. Add BBQ sauce and salt and pepper for 5 minutes. Mixing thoroughly.
Spoon 1/4 cup onto bun. Serve hot. Enjoy!
Sandwiches really kick it up a notch with toasted buns.
Also, serve with favorite side!
