This is a prime example that eating vegan is EASY!
Rice is a good staple to have in the vegan diet. It’s filling, versatile, tasty, not to mention inexpensive. Its a simple addition to add to some vegetables. This combination of foods is comforting and a hit with any type of eater.
You can almost include any vegetable you like to the mixture.
Thats the beauty of it!
In addition to the flexibility of the dish, its simple and quick! Whipping this up on a Tuesday is no issue after a long day of work. The chopping of the veggies may take the longest all together.
The vegetables I used include:
- Yellow, Green, and Red pepper
- Matchstick Carrots
Other vegetables could be mushrooms (my favorite!), zucchini, squash, or tomatoes. Drop vegetables in the comments that you tried!
To start, I measured out three cups of white rice and three cups of water.
While waiting for the rice to boil and to cook. We began to chop the veggies.
We cut the stems of the broccolini, and then they were ready to go as well.
Placing the prepared broccolini into the skillet along with the carrots, we begin to sauté with a bit more olive oil. (Side note, I would have placed all the vegetables in one skillet, but our skillet wasn’t large enough.)
After 10-12 minutes both the broccolini and carrots should be finished. Then we removed them from the stove top and set aside.
As for the peppers… we cut each pepper into about 1 inch matchsticks as well. we placed these in a good sized pan and coated with olive oil and some salt and pepper to taste.
The peppers took about 8-10 minutes on the stove top to soften up. Depending on your desired tenderness, cook longer. I like mine with a bit of a bite to them. Bring back over the already cooked broccolini and carrots. Mix well.
By now the rice should be done.
Spoon a good helping of rice onto plate or bowl, then place the veggies over top. Viola! Dinner is served!
Easy, tasty, vegan!
Sauted Veggies with White Rice
- 3 Peppers
- 1 Cup Matchstick Carrots
- 3 Cups White Rice
- 2 Bunches Broccolini
- Olive Oil
Measure three cups of rice and three cups of water. Cook according to package.
Chop the peppers into match stick pieces. Chop off the stems off the broccolini.
In an oiled pan, start to cook the carrots and broccolini for about 8 minutes.
Then add in the chopped peppers.
Measure out desired amount of rice. Top with 1/2 cup of vegetables.
